Bikini

Makes enough for 10 people

To make the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Premix (makes 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Put all the items into a pot, bring to a simmer, stirring until the sugar dissolves. After that, turn off the stove allowing it to cool down entirely. Decant to a clean bottle, cap it and refrigerate it in the fridge, it can be stored for up to a month.

To make Batch Mix: Mix the specified liquid ingredients into a sizeable container, allow it to infuse for an hour, then strain preferably using muslin, to ensure it's perfectly clear.

To serve: Add 85ml of the cocktail base into a cocktail shaker containing ice, and stir carefully for about 60 seconds to cool it down. Strain into a frosted cocktail glass or similar, decorate with a few cranberries and finish using a brief mist with the mandarin essence over the top.
